Savory Apple Tart with Caramelized Onions | Recipe

Some (read all) of the best, most inspired ideas I get are a product of decluttering my fridge. Having aisles and aisles of grocery stores at my disposal just overwhelm me. Having the need to declutter my pantry or fridge though, now that’s exciting stuff. The other day I had a box of chopped onions one day away from the need to be tossed out, and a pack of puff pastry in my freezer that really needed to evacuate the freezer and make room for some blueberries. Add a steady supply of apples in my crisper and I knew it’s time to to make a savory apple tart with caramelized onions!

I love, love, love puff pastry.  I grew up eating a lot of puff pastry turnovers, as they’re a super quick and were a favorite tea-time accompaniment.   I never make it from scratch at home, because frankly, why would anyone even need to do that when frozen, store-bought puff pastry tastes just as good? The usual stuffing in the turnovers made at my mom’s place consisted of spiced, minced meat with peas, or with a blend of cheeses. I like to experiment with lots of different fillings, such as the Aloo Tikkie Turnovers.

This time, I decided to get resourceful with other ingredients I had on hand. I had a container of chopped onions, and a basket of beautiful apples from Fruitful Day, and the rest is history. This one was a winner, do try it at home.

Ingredients:

  • 1 pack puff pastry dough
  • 1 1/2 cups caramelized onions
  • 1/2 cup zaatar
  • 2 cups mozarella (or better, a sharp cheese like cheddar)
  • 1 Granny Smith apple, cut into thin slices
  • 1/2 cup labneh

Method:

  1. Preheat oven to 190 degrees celsius.
  2. Roll out the puff pastry dough onto a parchment-lined baking sheet.
  3. Spread labneh on the rolled-out puff pastry
  4. Spread caramelized onions on top
  5. Sprinkle zaatar
  6. Spread out apple slices
  7. Scatter cheese on top
  8. Bake for 15-20 minutes.
