Moonrise Dubai and Solemann Haddad

August 18, 2022 , Haiya

Winner of Michelin Guide Young Chef of The Year Award 2022 and Gault & Millau Future Great 2022, Chef Solemann Haddad started making waves a mere six months into opening the doors to Moonrise Dubai.

Situated in what can only be described as the very intersection between the unassuming old-school neighborhood of Satwa and the glittery new Downtown/ DIFC, Moonrise is nestled on the rooftop of (residential tower) Eden House, guaranteeing guests both a very unique experience and vantage point as they make their way to the 8-seater, Omakase style venue.

Attention to detail would be a wild understatement, as that and the persuit of perfection make up the very fabric of Moonrise. Expect to be seated at perfectly spaced out and angled high chairs, as napkins spritzed with oud are laid out in your lap.

Burrata has humorously been dubbed “Dubai’s National Dish” by fine-dining expert Zoe Bowker, and for good reason! Moonrise’s spin on Stracciatella nestled in the most lush Muhamarra I’ve ever had.

The symbiotic relationship he shares with Dubai is one he speaks of with palpable love and fondness. “Dubai and I have grown together, side by side. We’ve witnessed each other’s evolution and progress”, he says, and the stories he tells of the inspiration behind each dish truly make you relive his childhood in the most endearing yet elevated way.

Solemann draws inspiration from the Middle Eastern yet multicultural influences and flavors that define his passion for food, and this defines the very essence of Moonrise. The only other two restaurants (in my opinion at least) offering such inspired degustation menus in Dubai are Ossiano and Tresind Studio.

The “Explosion”. Moonrise’s most unique interpretation of the Pani Puri, with Foie Gras and multiple layers and types of fat that gradually evolve on the palate as they come to body temperature.

The textbook definition of a third-culture kid, Solemann views the food influences of his childhood simply as  “Dubai cuisine”, an “Amalgamation of all the cuisines he grew up eating in Dubai”, particularly Middle Eastern, Japanese, and French. He lives to constantly discover new flavors that are nothing short of an awakening, and passes that feeling onto his diners. “Food is like music. The perfect dish is like the perfect song, with layers of perfect composition”, says Solemann. At Moonrise, we’re lucky enough to taste many of his perfectly curated compositions.
